Butterscotch and Crisp Rice Cereal Cookies

I love these. I see a lot of recipes using brown sugar... I prefer this one.

Yield: Lotsa Cookies

Ingredients

1/2 cup butter or margarine
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 cups crisp rice cereal
1 cup Nestle butterscotch chips

Directions

1. Preheat oven to 350.

2. Cream butter or margarine and sugar until light and fluffy. Add egg and vanilla; beat until blended. Add flour, salt, and baking soda, mixing well. Fold in cereal and chips.

3. Drop by tablespoon onto greased cookie sheet or use a Silpat sheet.

4. Bake 12 minutes or until lightly browned. Do not overbake. Remove to rack. Be sure to eat one of every batch to make sure they're okay.
